Power-Packed Quinoa Breakfast

Cranberry & Quinoa Breakfast Salad:
Dicing up the fresh cranberries adds a bit of a tart kick but is balanced out with the sweetness of the apples and makes a wonderful healthy breakfast.  Serve this after having 2 cups of fruit on an empty stomach.
1 cup cooked quinoa
1/2 cup diced apples
1/4 cup fresh cranberries (chopped fine)
1 tbsp dried coconut
1/4 cup chopped mixed nuts & seeds
2 Tbsp raisins

Dressing
1/4 cup pineapple/apple juice
1 tsp lemon/lime juice
1/2 tsp raw honey
In a large bowl combine dressing.  Blend well.  Add remaining salad ingredients and mix together with dressing.  Warm on the stove if needed, or you can eat it cold or room temperature.  Drench in a dairy-free milk of your choice.  A powerful way to start your day!
