Delicious Vegan Truffles!
When most people think of vegetarianism or veganism, they often automatically assume that these lifestyles are filled with self denial and inconvenience. However, there is nothing farther from the truth. While it is true that becoming either vegetarian or vegan does require a bit of re-education in terms of meal ideas and food preparation, a seasoned and experienced person following this lifestyle would be able to testify that there are endless possibilities when it comes to tantalizing the taste buds.
One of the biggest myths which most people believe, as they begin their fitness journey, is that they will be forced to travel a road of self-denial and tastelessness. It is true that self denial should be exercised by more of us, however for those who have opted for a healthier diet, excellent and delicious options still exist for those who crave dessert. Food should be enjoyable and palatable. And what better way to satisfy dessert cravings than with truffles! And vegan truffles at that! Here’s an awesome, yet simple recipe that will satisfy any sweet tooth.
1/4 cup of coconut milk
2 cups of vegan chocolate chips
1/4 cup + 2 tablespoons of coconut oil
1/3 cup cocoa powder, ground nuts, or coconut flakes (Option: add 1/4 teaspoon, or less, of cayenne for an added kick)
First, heat the coconut milk in a double boiler, then stir in the vegan chocolate chips and coconut oil until the chocolate chips are completely melted and mixed with the coconut oil.
Place the mixture in a shallow bowl and refrigerate until completely chilled.
Now, the fun begins! Use a spoon or melon baller to create your truffles. Use cocoa powder, nuts, or coconut to roll the truffles in before transferring into a storage container. Enjoy!
